Does anyone know if there is a way to control baby-stepping with the 12864 display & knob like on Marlin?
I found it a handy little option on the marlin firmware to be able to just double-click the knob and adjust baby-stepping live by turning the knob left or right.
Yes, you can - and it should be active during print in the Tune sub-menu:
