Z_offset not saving

Printer Model: Ender 3 V2 Neo
MCU / Printerboard: MCU Raspberry Pi 4 Mobel B / BTT SKR 1,4 Turbo

Describe your issue:

Hi all, suffering a bixare problem that’s been bugging me a few days. I have 2 printers the one I ma having issues with here & a Sovol SV05 both running Klipper on the same hardware. The Neo had a Spider V1 hotend which I had to change as you can’t get the silicone socks anymore. I changed it to a Spider V3 with adapter to fit. Once I got it all back together, did all the XY offsets & screw_calculate etc. Then I did z_offset & save config. When I tested it the nozzle ate the bed. shutdown & re-did z_offset, saved config, same issue. I started looking through the printer.cfg which under the BLtouch section has the z_offset: 0 commented out as it should, but under the BLTouch in the area that you DO NOT edit there is no entry for the Z_offset, so it is not saving the details. Compared with my SV05 (screenshots attached). If I add a z_offset value under the main BLTouch section in printer.cfg save it & then redo it again & save it, an entry will apear on the DO NOT edit section, but it is still wrong & the nozzle eats the bed. I am probably missing something obvious, but I just can’t seem to find it. I’ve looked trhough some previous post history & some users come close to a similar problem but can’t find one the same. I appreciate any assistance.
