I have a probe with a 33mm offset on the Y, but when probing the points are still relative to the nozzle, not the probe location. If I set the probe offsets shouldn’t the probe points be centered on the probe? (on other firmwares they are). What am I missing?
The key is “other firmwares” There’s no law that says these all have to work the same. You’ve already figured out the fix, so just adjust your offset for klipper. easy.

I’d also prefer another output - or the same way on homing and probing etc…
but have a look at BED_MESH_OUTPUT command - may it helps you
